Banana Protein Muffins

A great, easy to grab snack which provides a protein boost without the refined sugar and fat content of commercial protein bars. These muffins are simple to make and are great as a snack anytime. You can use whatever protein powder you chose, personally I use chocolate flavoured Soy protein.

Ingredients:

  • 1/2 cup Oats
  • 3/4 cup Protein Powder
  • 1/4 cup flour (I use wholewheat but would work well with plain flour, or gluten free flour)
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 2 mashed bananas
  • 1/2 cup milk (I find almond or coconut milks lend a nice flavour to these muffins)
  • 1/4 cup sugar

Method:

  1. Preheat the oven to 180°C
  2. Mix all dry ingredients thoroughly in a large bowl
  3. Add the banana, and milk and mix  until combined
  4. Spoon the mixture into muffin cases and bake for 15 mins
  5. Turn muffins out onto wire rack to cool
  6. Enjoy!
